Taj Tomato Rice

Ingredients:

1½ cups TAJ Basmati Rice

40ml Golden Circle sunflower oil

30g Garlic , minced

50g Onion , finely diced

50g Tomato sauce  or 2 pureed tomatoes

¼ teaspoon salt or to taste

1 nos Tomato, small diced

130g Carrot, small diced

130g Peas (frozen or fresh)

1½ cups Vegetable stock

3nos Red chilli, seeded & sliced (optional)

Directions:

1. Rinse and drain the rice in a fine mesh strainer.

2. In a large saucepan over medium-high heat, add the oil. Add the rice and stir to mix. Cook over medium heat, stirring frequently, until the rice is lightly golden brown all over (about 10 minutes).

3. Add diced tomato, tomato sauce, garlic, and diced onion to the pan. Stir. Add salt, carrots, peas, and water (and red chilli, if using. The chilli gives a little flavour but not spicy).

4. Cook and keep stirring. Bring to a boil, then cover, reduce heat to low and cook for about 20 minutes or until the water is completely absorbed. Remove from heat and allow to rest for 5 minutes before fluffing with a fork.
