Savoury Fried Rice with Raisins and Almonds

Ingredients:

200g TAJ Basmati Rice, uncooked

100g Shrimp, deveined, remove the shell

50g Chicken breast meat, cut into thin slices

30g  Golden Circle sunflower cooking oil

30g  Shallot, thinly slice

20g Garlic, chopped 

20g  Fresh red chilli, chopped

1 no Cinnamon stick

4 nos Cloves

2 nos Cardamom

3 cup Water

1 tbsp Black raisins

1 tbsp Golden raisins

Garnish

½ cup Black raisins

½ cup Slice almond, toasted till golden

1 no Green chilli, seeded and small dice 

1 no Red chilli, seeded and small dice

¼ cup Fresh coriander

Directions:

1. Wash rice, drain and set aside.

2. Heat the deep pot and add 3 tbsp cooking oil. When it is hot, add shallot, cinammon, cloves and cardamom. Stir fry till fragrant.

3. Add garlic, chilli and stir fry till the chillies are fragrant.

4. Reduce the heat to medium, add the rice and stir fry for about 1 minute before adding the water. Bring to boil, add chicken meat and cook till the rice is fluffy and light.

5. Add the shrimp and raisins, cover and steam for 10 minutes.

6. Place the cooked rice in a serving dish and garnish.
